The avocado has been having a moment in recent times, with many rediscovering the thick, green fruit and using it in all-new ways.
And now the hipster's pick could have its one flaw dealt with, as a machine has been designed to stop it from turning brown.
The dimpled dark green skin of an avocado protects it from the elements when it's sealed - but once a cut is made and the light green inside is exposed to air, an enzyme causes the flesh to oxidise.
This turns it to an unappetising brown, meaning the whole fruit either requires consumption in one go, or there's natural wastage.
Now, thanks to the Avocado Time Machine, you can say goodbye to that choice, and look forward to green and fresh-looking avo flesh for many smashed toast toppings to come.
The company behind the invention, Naturo Technologies , says the contraption - officially called the Natavo Zero - effectively 'turns off' the enzyme in the fruit.
The machine, designed by agricultural engineer Jeff Hastings, takes cut fruit onto its conveyor belt and, after five minutes of 'treatment', can stay fresh for up to 10 days.
A commercial machine, the company says there are currently two models: one that processes 250kg an hour, or one that does 500kg an hour, reports Mashable .
Although the company says the process does not involve chemical treatments, they have not revealed the science they do use.

But, they promises, it's achieved "without compromising the outstanding health benefits of the avocado fruit, which are fully retained."
There are plans for the tech to be used for consumer use in the future.
